Doro Wot

Serves 4

6 chicken drumsticks, roasted or fried
2 onions, sliced
2 tablespoons tomato puree
2 teaspoons Berbere
1 teaspoon black pepper
1/8 cup butter
6 hard-boiled eggs
2 cubes chicken stock

Heat the oil in a saucepan and fry the oinion until it is transparent. Stir in the tomato puree, crush in the chicken stock cubes. Simmer for 30 minutes. Add the drumsticks and the eggs and continue to simmer for 10 minutes more.
