Serves 4
3 tablespoons olive oil
1/2 pound bay scallops 1/2 pound medium prawns, shelled 4 garlic cloves, minced 2 cups chopped tomatoes |
1 cup fresh basil leaves, cut into strips
1/4 cup clam juice 1/2 - 1 cup heavy cream 1/2 pound pasta, freshly cooked |
In a large skillet, heat oil. Add scallops and prawns and cook about 3 minutes. Using slotted spoon, transfer seafood to a bowl.
To same skillet add garlic and cook 1 minute. Add tomatoes, half
the basil and simmer until sauce becomes slightly thickened (about 8 minutes).
Add clam juice and cream and simmer about 6 minutes. Add seafood
and remaining basil. Salt and pepper to taste. Serve tossed
with pasta.
