1 lb. beans
1 qt water
1 small onion
1T salt
2T cider vinegar
1t mustard
1T brown sugar
1/4 cup mild molasses
1/8 cup catsup
pinch of pepper
1/4 lb. bacon
Soak beans overnight in water with 1/2 tsp of baking soda.
Drain the water and add fresh water. Bring to a boil and simmer 1 hour.
Mix in all ingredients except bacon.
Cut bacon in squares and lay on top.
Bake 6-8 hours at 250 to 300 degrees, covering with a tight lid
while cooking. Do not stire while cooking, so bacon will brown on top.
Check water level periodically and add boiling water when necessary to
keep liquid at the top.
